2 $ Dinner: Thai Noodle Soup

This is an easy and delicious noddle soup, that I made in 10 minutes. You can use the vegetables that you already have or you can follow my recipe.

Ingredients (1 person)

 

  • 400 ml. (1,7 cup) water
  • 150 ml. (0,6 cup) coconut milk (7-8 %)
  • 1 dried noodle block
  • 1 chicken bouillon cube
  • 80 g. (3 oz) vegetables. Use what you think fits. I used cabbage, spring onions, sweet peppers and carrot.
  • Chili (powder, flakes, sauce, you decide)

I order to make the soup only cost 2 dollars, you have to cut the vegetables an put them in the freezer. My vegetable mix consisted of 800 g. (28 oz.) cabbage, 4 spring onions, 3 sweet peppers and ½ kg. (18 oz) carrots.

How to

Cut out the cabbage in squares. Slice the white part of the spring onions, save the green part for later. Cut the sweet peppers into thin slices. Peel the carrots and cut them in very thin slices by using the peeler. Mix the vegetables and take out 80 g (3 oz). Put the rest in the freezer.

Slice the green part of the spring onions.

Boil the water, add the coconut milk and the bouillon cube. Let the bouillon dissolve. Add the rest of the ingredients except chili and the green parts of the spring onions. Boil until the noodles are finished. Add chili and salt in the amounts that you like.

Serve with the green parts of the spring onions on top.
